This research aims to develop antimicrobial coating materials used for fresh food sterilization and conservation. A series of cationic polymers such as PEI and PHMB are formulated in micellar structure and exhibit antimicrobial effect including contact killing and anti-adhesion properties. The coating material is designed to be effective, durable and safe for the application of fresh food conservation in the supply chain. Several kinds of antimicrobial tests were taken and the results have shown that the coating materials can provide a long term antimicrobial efficiency against tested microorganisms. All the materials selected has been proven to be within the food safety level. The results showed that the coating materials and the products based on that have a broad application prospect in the market.
